Although Sta is generally more useful than Spirit, I have found that a good amount of Spirit is essential for grinding and for avoid long sit-down times in Group PVE, especially non-instances.
I am not qualified to speak on PVP, but I got my ass kicked by a mage 1 level below me in 3 separate duels this past weekend, and I was thinking if maybe I had some resistances and more Sta, things would have gone better. Oh - and if I had remembered that I had Silence, he would have been a dead undead! Deader? More dead? Disundeadified? My brain hurts...

Ive been trying to get a set of armor with tons of int/spirit, of the owl i think, for grinding purposes. Since at 60 your killin for loot/money, im killing whatever drops the items i need which isnt ussually higher lvl guys so im killing them before they get a hit on me. Spirit is nice for keeping mana lasting long. Mages have mage armor which does 30% mana regeneration during battle so if i had lots of spirit grinding would last a lot longer. Stamina i have for pvp and and when in instances. BTW Zrog.....hehe to have any good worth while resistance i think u gotta have like 80+ of that resistance for it too be really any good. Sof ro you....every peice of that thorium set there is plus rings and whatever else u can get. And unless you were only fighting thatr single mage/spellcaster its ahrd to really get armor any good against all the magics. I have a few things for when im fighting fire elementals cus im a fire mage...but for the others ive givenup. But yah that silence would have given you a much better chance. We should duel one of these times...i wouldnt mind it

Duel you? With one arm tied behind your back, maybe? That way, you'd have to choose between mouse or keyboard... and I might have a chance...
Zrog IS way cool and all, but a level 52 vs 60? And with my Protec spec?

Heh, you could always go find a nice beefy axe and hand it to him violently. At least, that's what I'd do. Hamstring works wonders for the anti-kite.
As for STA & SPI, Spirit IS VERY USEFUL for PvE. You need to be able to heal, and heal, and heal, and heal, and heal for a long time. Spamming Flash Heal isn't very effective, but Greater Heal's cast time makes it dangerous against end game mobs. Regular old 'heal' isn't much more efficient than Flash either.
PvP though, it's a waste. Just melt faces while being able to stay around long enough to get the HK's, then die and spawn again. <3 The BG Spirit ressers.
Same applies to mages. You need to cast, and cast, and cast.... in the end game. You shouldn't be getting hit, and if you are all the Stamina in the world won't save you from a boss crit, although it is nice to be able to take a few random hits, and Geddon's bomb.
I've a pic somewhere of a Lava Annihilator critting my mage for 3116. That was scary! If I can find the link, I'll put it here.

After playing a preist for a bit, I would have to say that spi of very important. At level 20 you get Flash Heal which should heal you for most of your HP while grinding. Since you can't make water like mages do, the extra spi helps to keep you moving. Spi is also great in groups so you don't have to hold up the group to get mana back. Just some random thoughts.
